- Working in a bowl the butter, sugar until a creamy mixture, add eggs, mix well, add cinnamon powder, clove powder, a pinch of salt, stir flour sieved and almond powder, knead fingertips until a smooth paste and firm, roll it into a ball and let stand for 1 hour in refrigerator.
- Spread the dough to a lowering of 1cm thick, darken a buttered pie pan with the lowers, prick the bottom with a fork, cover with cherry jam.
- Cut the remaining dough into strips, have them cross over pie, brush with egg yolk.
- Cook in a hot oven for 20 minutes.
