INGREDIENTS

PERSONS : 6

- 1kg of potatoes

- A bouquet of parsley chopped

- 1 pinch of saffron

- 1 teaspoon cumin

- 1/4cuillerée coffee hot pepper

- 1/2cuillerée coffee pepper

- Salt

- Oil for frying



Fried dough

- 125g flour

- 1 tablespoon yeast baker

- 1 tablespoon of cornflour

- A large glass of lukewarm water

- Salt, pepper, saffron



The tomato sauce

- 4 tomatoes

- 2 tablespoons of tomato concentrate

- 1 small bunch of chopped coriander

- Spicy chillis 2

- Salt

PREPARATION

TIME OF PREPARATION : 40 mn

- Prepare batter frying in a container in mixing flour, water, cornflour, yeast, saffron, salt, pepper, stirring well until a soft dough.

- Wash the potatoes, put them in a pressure cooker filled with salt water, to cook them with their skin once cooked, drain them and remove the skin, move them to the mill vegetables in order to obtain mashed or crush them with a fork.

- Put in a bowl of mashed potatoes, chopped parsley, cumin, saffron, hot pepper, salt and pepper, mix well.

- Shaping balls with the mixture and flatten slightly with your hand, plunge into the dough frying then frying them in a bath of hot oil, remove when maâkoudas are well browned on both sides.

- The blot on paper towel.



The tomato sauce

- Wash the tomatoes, wipe them and cut them into pieces, place them in the bowl of robot-mixer with water and mix well bite pepper mixture, filter preparation in a colander.

- Pour the tomato sauce in a pan, add the chopped coriander, salt, concentrated tomato paste and cook uncovered over low heat, stirring occasionally with a wooden spoon until the sauce thickens.

- Serving maâkoudas in a dish with tomato sauce.
