INGREDIENTS |

* 3 eggs lightly beaten
* Salt, pepper mill
* 1 medium onion thinly sliced
* 6 green onions
* 1 C. tablespoons of peanut oil
* 4 cups cooked long grain rice cooled (to cook the day before, preferably)
* 1 / 2 cup (or more) of frozen peas
* Soy sauce (to taste)
* 250 gr. cooked shrimp
* 250 gr. ham, cut into thin strips
* A pinch of spice mixture 5 Chinese

1. Salt and pepper the eggs.
2. Cut the onion finely
3. Cut green onions into small chunks and ham into very thin strips
4. Heat oil in a wok to coat well the bottom and edges
5. Take back the onion over high heat until transparent
6. Put the ham and stir fry for 1 minute
7. Add the rice and peas and jump 3 minutes to reheat rice.
8. Pour eggs, soy sauce, green onions and shrimp.
9. Add the spice mixture 5, correct the seasoning (more or less soy sauce) and serve. It is important not salt before putting soy sauce.
Note: Personally, I do not much green peas in the dish, I put less than in the recipe. But you can save more, if you wish.
