- 1litre milk
- 200g cream
- 300g sugar
- 1kg pears
- Syrup 16 ° B |

- Mix the milk with fresh cream and sugar in a saucepan.
- Cook over low heat (85 ° C), without ceasing to stir until cream tablecloth spatula.
- Poach pieces of pears in syrup to 16 ° B. drain and mix.
- Pour the cream on pulp pears. Skip the Chinese.
- Cool, stirring occasionally to another.
- Pour the cream into an ice cream maker.
- Mould, smooth.
- Book a freezer at -18 ° C for 4 hours.
