INGREDIENTS

PERSONS : 6

- 250g flour

- 17g of baker's yeast

- 1 good pinch of salt

- 2 tablespoons olive oil

- 1 green pepper

- 200g squid

- 2 onions

- 150g of celebrated cut into cubes

- 3 tomatoes

- 1 tablespoon of tomato concentrate

- Some green olives

- Thyme

- Salt and pepper

PREPARATION

TIME OF PREPARATION : 60 mn

- Peel and cut onions into rounds, making them brown in a skillet with a little butter, salt and pepper.

- Cut the squid in half and remove the ink bag and remove impurities and skin dew, putting them into a pan of boiling salted water and cook for 1 hour, drain them and cut them into cubes with a sharp knife. - Wash the tomatoes; grate them in a rasp a big hole.

- Cook the grated tomatoes in a skillet with oil, add the tomato concentrate, salt and pepper, let reduce until the total evaporation of water, stirring regularly to get a thick sauce.

- Wash the peppers, remove seeds and cut it into cubes, make them return to a skillet with oil, salt and pepper.

- Pad yeast with 3 tablespoons warm water.

- Put in a bowl the flour sifted, digging a well, add yeast padded, salt, olive oil, gather the dough with warm water, knead it gently until it is flexible and smooth, form a ball of dough, cover it with a cloth and let inflate in a warm place for 2 hours.

- Once inflated the dough, knead again on a work plan floured.

- Spread the dough in the shape of a disc and put it on a plate covered with paper baking.

- Coat surface pizza with tomato sauce spread the golden onion, diced pepper, celebrated cubes, chunks of squid, garnish with green olives and chunks of pickle, and sprinkle with thyme crumbled.

- Bake in a preheated oven at 210 ° C until the dough is golden brown.

- Serve immediately.
