- 800g potatoes
- 1 onion
- 1 can tuna in oil
- 2 tablespoons of parsley, finely chopped
- 3 egg whites
- 1 small bowl of durum
- Oil for frying
- Salt, pepper, saffron, cumin |

- Drain tuna and crumble it.
- Peel and finely chop the onion and make it back into a pan with a little oil until golden brown.
- Wash well potatoes and put them in a crock pot of lightly salted water, making them cook for 20 minutes, once cooked, remove the skin and pass them to the mill vegetables to reduce pureed.
- Put in a bowl of mashed potatoes, tuna, chopped parsley, onion golden saffron, cumin, salt and pepper, mix well.
- Shaping with this mixture of croquettes shaped flange 7cm long and 2.5 cm wide, rolling them in durum then dip them in beaten egg white.
- Fry in a bath of hot oil, remove when croquettes are golden.
- The blot on paper towel.
- Serve hot.
