- 4kg olives
- 2kg of lemons

- Inciser in along each side until olive pit, wash them and put them in jars. Cover with water and close well.
- Change water every morning and evening for three days after continue to change every two days until the olive s'adoucisse. Cover with water and always take care tighten jars.
- Wash well lemons then put them in a bowl, pour over the water a little hot and coat each lemon with salt and then the incision into four, taking care not to cut the ends of lemons.
- To fill the slots of each lemon with salt.
- Arrange a layer of lemons in a large bowl scalded and sterilized and a layer of olives until the olives and lemons, cover with boiling water and warm, close the jar well and leave to protect from light for a month.
