• Mix the milk with fresh cream and sugar in a saucepan.
• Cook over low heat (85 ° C), without ceasing to stir until cream tablecloth spatula.
• Wash, stone plums. Cut into pieces.
• Poach pieces of plums in syrup to 16 ° B. drain and mix.
• Pour the cream on pulp plum. Skip the Chinese.
• Cool, stirring occasionally.
• Pour the cream into an ice cream maker.
• Mould. Smooth.
• Keep a freezer -18 ° C for 4 hours.
